Ingredients
(4 servings - 18 g protein and 6 g carb per serving)
4 cups chicken broth
1/2 raw cucumber (unpeeled, sliced very thin)
4 whole mushrooms (sliced)
2 cups shredded fresh spinach
1 whole tomato (cubed)
1/2 cup leftover or pre-cooked chicken (shredded)
In saucepan, heat chicken broth to near boiling.
Add vegetables and meat.
Bring to a boil.
Simmer five minutes.
Serve while hot.
